apricots and almonds by aFrozenMoment on flickrI love apricot jam. My mom and sister used to make huge batches of apricot pineapple jam when I was small. I think that’s where I grew to love the flavor of apricots, but . . . I’m not crazy about eating them plain, fresh or dried (something about the texture). This recipe is an attempt to get that apricot jam flavor into a bar, without all the sugar. I think it works. I loved how these turned out, naturally and mildly sweet with lots of apricot flavor.

Directions:

Add the following to your food processor . . .

  • 4 oz Almonds

. . . and process until almost a butter. Add . . .

  • 4 oz Deglet Noor Dates
  • 8 oz Dried Apricots

. . . and continue to process until the dates are evenly distributed with in the nut mixture. Add . . .

  • 1 tsp Baking Soda
  • 1 tsp Vanilla
  • 1/2 tsp Real Salt
  • 1 large Egg

. . .  and process until well mixed. Place in a 8″ x 8″ glass baking dish and bake at 350 degrees for 25-30 minutes. Cut into 9 squares.

Each square has 187 calories, 28g carbs (4g fiber), 4g protein, 7g fat per square.
